Beef roasting times (at 180 degrees C in a fan oven - adjust according to your oven type):

Rare: 40 minutes per 1kg + 20 minutes

Medium: 50 minutes per 1kg + 20 minutes

Well done: 60 minutes per 1kg + 20 minutes

Allow your joint to come up to room temperature before cooking, and allow at least 15 minutes for it to rest after cooking - this will help make sure that your meat is as tender as possible!
